I cannot tell a lie…

 IMG00666As you know, we’ve been busy eating to live around here.  I’m putting so much energy into fresh, fresh, fresh stuff and low cholesterol and beans and grains and you know the stuff I’ve been sharing here on the blog…well, my hubby (who has endorsed me as his personal dietitian, and has been extremely cooperative with all the strange and wonderful things on his plate of late!) phoned the pastor from Oklahoma where I recently ministered on Developing the Dynamic Potential of our Youngsters.

April 08 035(here I am with some of my new friends from OK)  He wanted to thank him for the gracious hospitality and kindness the church/Christian school showed me while I was with them.   Well, the pastor let the cat out of the bag and told him how much I enjoyed my chicken fried steak, mashed potatoes, (all covered in gravy, of course) and sweet tea while lunching with them!  Yep.  It’s true.  I still *sigh* as I look at this delicious photo.  I ate every bite. Oh, don’tcha’ just love to eat?!?! Well my hubby happens to love Southern food, especially now, when I’m feeding him, in the words of my Seth, “like a caged zoo animal” with everything that grows from the ground; so he was green with envy when he got wind of my home-cooked glorious lunch.

I am back on the wagon, behavin’ myself, and today as I served up the ‘Clean out the Fridge Italian Pasta Salad with Albacore Tuna’ (it was amazing, creative I must say, but delicious!), my Levi took one look at the unusual noodles, referred to it with some humorous sarcasm and groaned dramatically as I said, “eat it, my boy!”  I think he’s really enjoying chiding me about all the beans he’s been bumping into on his plate and also about the firm texture of the pastas…but he’s more ‘bark’ than ‘bite’. He knows I’ll win, anyway.  Have a great Thursday…it’s almost TGIF, so hang in there!
