“Breakfast Burritos”, a Mira family favorite, morning, noon or night…

5-24-2009 043We‘ve been creating  breakfast burritos in our kitchen long before they were cool!  Even McDonalds serves their own fast-food version, but few people I know prepare their own.  I’m not sure how we stumbled across what’s become a family tradition, but lots of folks have never tried them until they’re sitting at our breakfast table. These delightful, savory roll-ups always get rave reviews, are excellent snacks, lunches, brunches and midnight yummies, so I thought I’d share the recipe with you.  

Breakfast Burritos

  • 1 dozen eggs, lightly whipped with a fork
  • 2 T butter
  • 2 baked potatoes diced-no need to peel (Often I serve baked potatoes at dinner, always baking more than is needed so that I can use the leftovers.)
  • 1 small onion chopped small
  • 8-12 slices bacon, cooked and chopped
  • 2 cups shredded colby jack or cheddar cheese
  • salt and pepper to taste
  • 2 dozen flour tortillas (Our favorites are the refrigerated, raw ones Costco sells.  You peel them apart, cook them on both sides quickly (see below), and they taste so fresh, as if a little old lady on the streets of Mexico just made them!)

  • Your favorite Mexican salsa or pico de gallo

Cooking Instructions:  Melt a couple of tablespoons butter in a fry pan.  Add potatoes and onions.  On med-high heat stir-fry until potatoes are browned and onion is tender and transparent.  Fold in the eggs and bacon.  Lower heat to medium and stir almost continually as the eggs cook, being careful not to burn or dry out the eggs.   As soon as the eggs are firm, turn off the heat and sprinkle cheese over all.  Salt and pepper this mixture to taste. Put a lid on top to contain the heat so that cheese melts.

5-24-2009 042Here you see the egg mixture used to fill the tortillas. Scoop this filling mixture into the middle of a warmed flour tortilla, top with salsa, roll and eat!

As with so many of my recipes – adjust to your preference.  You may prefer vegetarian, adding sliced avocado and removing the meat.  You may prefer another type of breakfast or dinner sausage or ham, chopped, in place of the bacon.  You might want to dress these guys up with fresh cilantro, sour cream and fresh diced tomatoes.  Have fun and enjoy!
